It’s been a long week. The weather has generally been horrible, and while there have been a few good events, we’ve mostly just been sitting around waiting for Aviary to finally open. But you know what is helping us clam down? We’re really into this impressive video that Ben Chandler put together about Butcher & Larder. The seven minute video goes over some of the basics of the shop. While we’ve heard most of the talking points about using locally soucred meat and utilizing the underused cuts, we haven’t heard owner Rob Levitt talk about them while breaking down a carcass with a huge knife at the same time. Honestly, we were a little worried about his fingers on a few occasions, but we suppose that he’s getting pretty good at it. Check out the full video below.
