Sean Canavan to Head Kitchen at Bluestem Brasserie

In today’s Inside Scoop print column we have the reveal of the chef hire at Bluestem, the steakhouse-turned-brasserie going into 1 Yerba Buena Lane after three years of delays. Sean Canavan, previously in the kitchens at Left Bank in Larkspur, La Folie, and Chapeau!, will be the executive chef. Owner Adam Jed is giving the delays a positive spin by bringing in a buzzword that wasn’t so prevalent three years ago; he says the delay “gives us the opportunity to expand our offerings beyond steak house center cuts, and focus on whole-animal butchery.” Also it seems wise given the glut of steakhouses in the last year to be going in the brasserie direction. They’re on track for an early summer opening.
