A wine bar’s been born nearly every month, it seems, for the last year or so, and that follows on a decade of boom times for the genre. Now, 7x7 rounds up all the new-concept wine bars that have opened in their new issue, including Barrique with their “barrel”-style, blind-tasting tap system; Heart and their infamous Mason jars; and Vinyl’s music-themed space where owners Kris Esqueda and Mark Bright “want to catch our patrons as they make the transition from PBR tall boys to ordering nice bottles of wine.” (Sidebar: Did you know that London Wine Bar in the FiDi, now Georges, was America’s first wine bar opened in 1974?)
