Chef Russell Jackson was fairly adamant upon opening his Embarcadero restaurant Lafitte, which celebrates a year in business next week, that his would be a “menu of logic” that would change every day. He has a passion for improvisation, you see, and he wanted to keep things constantly fresh. This of course was not a new idea, and plenty of restaurants change their menus daily, but usually it’s just tweaks of ingredients here and there, and dishes that are hits will typically recur. Michael Bauer, in a relatively unkind review, noted that Jackson’s improvisations led “to some pretty interesting, sometimes strange, combinations [that] aren’t always successful.” Jackson stuck by his guns, though, and only now is telling the Feast that he’s letting go of that and will henceforth be “steering the ship into what he calls more of a ‘modern brasserie.’” Very interesting.
Also, in the video below, he says he craves “altitude” in life, and likes skydiving.
