This morning, Eater reported that Chris Lee’s recent replacement at Aureole, Christophe Bellanca, was out after just five months. The restaurant’s new executive chef is former sous-chef Marcus Ware, who took the reins yesterday. Today, he told Grub Street, sort of, what the plan was now that he’s in charge: “Guests can expect the menus to continue to change seasonally and incorporate new signature progressive American dishes. I have a great respect for Chef Palmer and will keep working closely with him on menu development. Our new summer menu is expected to debut in June.” Okay then! Let’s hope that Ware’s summer dishes are a little more exciting than his canned statement. [Eater NY]
