Aaron Ziegler To Run Malibu Inn’s Kitchen, Opening April 13th

Last week we learned that Top Chef-testant Angeleo Sosa was helping to design the menu and food program for a revamped Malibu Inn through his consulting company. This week we learn who will stick around to execute the menu when the property reopens on April 13th. Aaron Ziegler, formerly of The Conga Room’s BOCA at L.A. Live, is the executive chef here, having worked with Sosa to put the menu together for owners/brothers Alex and Steven Hakim and managing partners/Vegas nightlife big wigs Kelley Jones and Frank Tucker. So, what will Ziegler be cooking?

Malibu Inn will remain a live music and entertainment venue, but the big change at this 60-year-old location is the food and new rock n’ roll tribute space by Andrew Alford. The new digs will include nods to the venue’s hippie past (it was once owned by Neil Young) with a VW van converted into a photo booth and colorful murals that have been both created and restored for the new space. It promises to be both beachy and hard-rocking, which aren’t necessarily exclusive. There will also be a private room, a space for billiards, and an outside patio, just in case Ninja Academy start bugging you out with a ferocious live set.

Sosa and Ziegler are endowing the Inn with bar-friendly eats like popcorn shrimp, sliders, smoked pork ribs, and something a press release calls “smack and cheese.” (As if food isn’t already addictive enough). Naturally, seafood will be a feature of the beach-adjacent property as well, with servings like California coastal mussels, grilled swordfish with green olives and tomato tapenade, and the Inn’s own take on a lobster roll. And yes, there will be craft beer, though keep in mind, you will be dealing with The PCH when it’s time to go home.
