Tim Goodell is gearing up to open Public Kitchen & Bar at The Roosevelt on February 28th. Here Goodell plans a menu of market-driven American cooking just off the lobby of The Hotel Roosevelt. The space will stay true to the hotel’s status as a Hollywood legend with banquettes, a private garden room, and a ceiling mural that was unearthed during construction. In addition, the walls will have caricatures of guests like The Palm or Sardi’s. Now on to the food.
Goodell, who brought upscale burger joint 25 Degrees to the hotel as few years ago, plans a menu of meat-centric dishes that mostly fall under the 30-dollar price point, with a press release previewing chicken liver terrine with kumquat marmalade, chicharrones with chili pepper and lime, potato tart with caramelized onions, spiced duck steak leg confit, Duroc pork schnitzel, and crispy oxtail galette. The chef says it’s what he cooks for friends and family, those lucky ducks.
An additional blackboard menu will feature specials along the lines of trotter and black truffle sausage and lamb bolognese with Bellwether Farms ricotta. There will also be a bar extending into the hotel’s lobby featuring cured meats and cheese, while oysters and small plates will make up much of the rest. The dining starts with dinner at the end of this month, to be joined by lunch and brunch come spring.
