
Chef Nick Balla, most recently of Nombe, is taking over the kitchen at Bar Tartine next month and doing an about-face from Japanese izakaya fare to start cooking Central and Eastern European food. As reported earlier, he and Tartine owner/master baker Chad Robertson have been taking a research trip in Europe, and Grub Street asked Nick to send us back a few photos of what he’s eating. Here’s what we’ve got so far, from meals in Copenhagen and Budapest — including a trip to Relæ, a Copenhagen restaurant from a Noma alum.
Additionally, expect to see Robertson branch out to baking breads from Scandinavian and Eastern European traditions as well. Sadly, we don’t yet have pictures of those.
