The Grainery is the name Fork & Barrel owners Matt Scheller, Matt and Colleen Swartz have chosen for their new Center City project, Seen Through a Glass’s Lew Bryson reported yesterday. And one of the many interesting details to emerge about the forthcoming bar and restaurant is, it will feature it’s own nanobrewery that Terry Hawbaker, former brewer at Williamsport, PA’s Bullfrog Brewery, will helm to create small batch artisan sour, wild fermented, barrel aged and saison style beers. Still the focus will not be on the house-brewed beers. They will account for four of the Grainery’s planned 24 taps. In addition to beer, the owners have signed up New York mixologist and beverage consultant Damon Dyer to develop a Victorian-era cocktail program, Meal Ticket reports.
In addition to housemade beer and inspired artisan cocktails, The Grainery will offer 20-plus European craft beers, game dishes and house-cured charcuterie.
