John Brandt-Lee, the chef behind West Chester’s well-received BYOB Avalon, plans to open a second restaurant this spring in the Chester County ’burb of Downingtown. The new spot, Avalon’s Pasta Bistro, will focus on Brandt-Lee’s housemade pasta dishes, and will also feature flatbreads, salads, a 15-itme antipasti and an extensive selection of cheeses. The restaurant will take up residence in the historic house that was formerly the home of Jasper at 78 West Lancaster Ave. (Route 30), and feature roughly 40 seats downstairs, an additional 10 upstairs and as many as 40 more outside, weather permitting.
