Conshohocken-born Joshua Lawler, who most recently was chef de cuisine at New York’s benchmark farm-to-table restaurant Blue Hill at Stone Barns, will open The Farm and Fisherman, a 30-seat white tablecloth BYOB at 1120 Pine Street this spring in the former home of Paul. With an emphasis on regional produce, meat and fish, Lawler will offer “snapshots of the seasons here in the Delaware Valley,” according to the press release. Menu highlights include slow cooked heritage pork jowl with shaved brussels sprouts and smoked lady apple, grass-fed lamb sirloin and neck with local feta spread, winter spinach and orecchiette, and vegan braised celery hearts with rice grits, quinoa and parsley.
