Last year was surely “The Year of the Taco,” as the Mexican staple found itself fused with the ingredients of international cultures far-and-wide while being embraced by the industry post Kogi-boom. The 99-Cent chef has a new creation inspired by this trend in Tacodom, as well as by Wolfgang Puck’s smoked salmon pizza that helped put Spago on the map (as well as in our Food Chain feature). We’re sure the guys at Takosher, creators of the latke taco, are plotzing with envy over the chef’s new “Loxaco,” a clever combination of cream cheese and lox in a corn tortilla. Check out the video below wherein chef Billy Vasquez breaks down the recipe and even adds a sinfully appetizing pork skin tortilla to the mix.
