Stephen Wambach Leaves Epic; Replaced by Michael Shrader

There has been a little shakeup at Epic as the Executive Chef, Stephan Wambach, has decided to leave the restaurant he helped make one of Esquire’s best new restaurants of 2010. Unlike some recent chef departures, this one seems a little less dramatic. Michael Shrader was immediately named as the new chef. He has previously been the executive chef at N9NE in Chicago, and has most recently helped open branches of the restaurant in Dallas and Palm Springs. The menu will stay the same at Epic until after the new year. So what happened to Wambach?

According to Eater, Wambach “remains on good terms with the owners,” but decided to leave to explore other options. Currently he is helping Laurent Tourondel open LT Signature Restaurant in Panama City, Panama. He’s then going to travel around Panama and Costa Rica, before returning to New York. He hinted that he may return to Chicago, but is more likely to explore chef positions abroad.
