We haven’t heard much about Ryan McCaskey since he left Courtright’s back in 2008. In the meantime he’s been consulting with restaurants like the Saigon Sisters, and, apparently, working towards this new restaurant in the South Loop which will serve “progressive seasonal American food.” Unlike a lot of recent chef ventures, this one is going to be high end. No name for right now, but there is an address. Look for it to open at 1639 South Wabash next summer. But what about the menu?

According to Chicago Magazine, there will be two tasting menus, one that is five courses and one that is eleven courses. Also, McCaskey let us know what else to expect: “There will be two tasting menus. But also ala carte dining with entrees in the $20-$28 range, thus resulting in a ballpark $60 per person check average. Also will have a great bar menu($5-$14). Charcuterie, cheese, fun takes on American bar food.”
