It’s perfectly normal for Grant Achatz to shock us with some wild ingredient or cooking method. So it’s satisfying to have the Chicago Reader challenge Achatz to use an ingredient he’d never encountered before. In a new column they are launching called Key Ingredient, a chef is given a crazy foodstuff and asked to create a dish. Then they pick an ingredient, pick a new chef, and on and on. Fortunately this new column also has a video component done by Mike Gebert of Sky Full of Bacon, so you actually get to see how Achatz creates a riff on the classic holiday cocktail, the Tom and Jerry, with kluwak kupas.
