Meadowood Gains a New Pastry Guy

And in further pastry chef news this week, Meadowood has hired a replacement for Matt Tinder — who took a job at Saison last month — and it’s Boris Portnoy. Portnoy most recently worked at Campton Place in S.F., but previously worked at Cru in NYC, Deux Cheminees in Philly, and Mugaritz in Spain. He’s also partners with Alembic bar guy Daniel Hyatt in Sucre Punch, a dessert-and-cocktail consulting biz. Exec chef Christopher Kostow says, “I have known and admired Boris’ work for many years. To have him join the team here is immensely exciting for me.” It was Portnoy who was responsible for the dessert courses seen here and here from the Twelve Days of Christmas. [Grub Street]
