Haymarket Pub & Brewery Opening on Thursday

Just adding to the opening frenzy this week is Haymarket Pub & Brewery, which plans to open on Thursday in the West Loop. We first heard about this place back in February, and from the very beginning we knew one thing: It’d be big. There is seating for over 300, which doesn’t include a proposed beer garden for the summertime. It’ll also house the Drinking & Writing Theater, which sounds like the kind of performance art we could get into. So what else can you expect from this place?

Well, they have an impressive brewmaster with Pete Crowley, who is most famous for his work with Rock Bottom Brewery. They will feature over 10 different homebrews, along with another 20 or so other tap beers. The food comes from Chris Buccheri, who was most recently the sous chef at the Three Floyds Brewpub in Munster, Indiana.

According to Eater, the menu will include burger, pizzas, homemade sausage, and rotisserie chicken. The official menu isn’t out yet, but in the meantime, check out this video from Hopcast, which has been following the progress of the Haymarket over the past ten months.
