
Granite Hill, the Stephen Starr revamped restaurant at the Philadelphia Museum of Art, hosts an Italian wine dinner tonight that’s inspired partly by the wines from the Province of Piedmont and the museums ongoing exhibition Michelangelo Pistoletto: Cittadellarte, the City of Art. The $65, four-course dinner was conceived by Granite Hill’s new chef Philippe Trosch, who replaced Shane Cash, who of course replaced Top Chef champ Kevin Sbraga at Rat’s. Some highlights include fried Blue Point oysters with madras curry remoulade, petit vegetable slaw, paired with Beni di Batasiolo Gavi, Piedmont 2009, and a Pistolleto salad with organic beets, apple segments and ricotta cheese, paired with Araldica, Barbera d’Asti ‘Albera’, Piedmont 2007.
