
At Spanish chef Jesús Núñez’s first American restaurant, Graffit, slated to open next weekend, the erstwhile graffiti artist will meld traditional flavors like saffron and smoked paprika with modern technique — the sort of science-project cooking required to fry squid “spheres” and engineer transparent white rum cannelloni for dessert. Chilean artist Dasic Fernández spray-painted the murals that adorn the dining room and the bar, where customers can order tapas by flipping through a deck of Núñez-illustrated cards.
