Roxy’s Gourmet Grilled Cheese is giving new meaning to the term “aged cheese.” Open up, guys! We first reported that the grilled cheese truck, with plans to park itself in Cleveland Circle, would debut this summer. Then, word on the street was they’d be open for business this week. But don’t get too excited. We just got news from the (very perky) owners that the opening has been pushed back to next week. Guess we’ll have to slink down to South Station for our grilled cheese fix ‘til then.
