Yesterday South Philly’s Devil’s Den announced that Paul Trowbridge was taking over reigns of the kitchen from outgoing chef Alex Ureña. Trowbridge will be the gastropub’s fourth chef in less than three years. Ureña, who abruptly jumped ship at R2L on the eve of its opening last January, replaced Allen Dann who stepped in back in May 2008, replacing opening chef Joe Turrisi. According to a prepared statement, Trowbridge comes from Moriarty’s Irish Pub and has served in kitchens at Alison Café, Alison at Blue Bell and the late-great Vega Grill. Here’s hoping he outlast his predecessors.
