So, there’s a lot going on here. At first glance this is just a video from the Alinea kitchen to the French Laundry to celebrate the latter restaurant’s 16th birthday. It’s a nice gesture. But it’s also more than that. Grant Achatz has never been shy about pointing out what a mentor and friend Thomas Keller has been to him over the years, and the video begins with a clip of his poignant acceptance speech at the 2008 James Beard Awards, where he personally thanks Keller. Luckily it’s followed by a fairly detailed explanation of how Keller taught Achatz to prepare tripe. You know, the stomach of a cow. Did we mention the intense video montage, which shows a lot of people working really, really hard at scrubbing dishes? You should probably just check this one out for yourself.
