For months now Grant Achatz has been teasing us with videos of the cocktail development at Aviary. It’s been illuminating and always fascinating, but, as Bon Appétit recently reminded us, Aviary is just one of his new projects. Besides the initial trailer, this new video on YouTube is the first look at what’s going on at Next. Watch as Achatz and Dave Beran create a chicken dish for the Paris 1906 menu. It definitely looks very old and very French, but as Time journalist Joel Stein notes, it “tastes new.” “That’s what I keep telling everybody,” Achatz says, “What’s old is new.” More videos like this, please.
