Chicken-fried watermelon, crudo, buffalo carpaccio, and white chocolate polenta with Frosted Flakes, from a chef who’s not afraid to embrace molecular gastronomy, arrive at Marina del Rey next Wednesday with the opening of Vu, a new restaurant in the newly opened Jamaica Bay Inn. In addition to the eats of Richard Blais vet Kyle Scutte, the 150-seat indoor and outdoor restaurant features fire-pits overlooking the beach, a Pacific-centric wine list, and seasonal cocktails.
