Prior to drawing up the menus for Stephen Starr’s Granite Hill at the Philadelphia Museum of Art — and subsequently dashing off to take the reins at Starr’s Rat’s after Kevin Sbraga’s departure — Chef Shane Cash did a stage at Berkley’s world renowned Chez Panisse. What he walked away with, a more comprehensive focus on seasonality and sustainability, is clearly evident on the menu at Granite Hill, as well as the museum’s Cafeteria, Balcony Café and Gallery Café at Perelman, which are also run by Starr’s catering division.
