Today Tasting Table tells the story of chef Michael Tusk’s latest prized possession, the wood-fired Universo rotisserie-grill he had shipped over from Italy and which serves as the centerpiece of Cotogna’s open kitchen. They also adapted the recipe for his very autumnal rabbit spiedini (skewers) with artichokes and pancetta, so that you can make it on a regular grill pan or charcoal grill. Thanks guys.
