Why are videos about making cocktails so fun to watch? We’ve been amazed by the short videos Aviary has put out about serving drinks in ice or aging them in barrels, and now we have a whole new set to obsess over. Benjamin Schiller, whom we spoke with a few weeks ago about cocktails, talks about the initial stages of creating drinks for Giuseppe Tentori’s new GT Fish & Oyster. He starts two drinks with the same base formula. To this he adds egg white to one, and bitters to the other. What comes out are two very different looking drinks. Not exactly cucumber encapsulations, but perhaps a little bit more practical for your next cocktail party. Plus the story Kevin Boehm tells at the beginning about Peaches is priceless.
