According to a press release, David Chang is opening his first non–New York restaurant in … Australia? So this is what Budd Mishkin was talking about! For some time, Chang has been toying with the idea of Vegas, where the environment is said to be more restaurant-friendly, but it turns out his first project in a casino will be at Star City in Sydney. It’s currently undergoing an $860 million redevelopment that will include restaurants from Chang, a former executive chef for Nobu in the Bahamas, and some buzzy Australian chefs. And you thought midtown was a stretch for the Changster! Expect Aussiefuku (actually, Chang tells the Sydney Morning Herald that the concept is still being worked out) to open late next year.
