
Eater reports that Brooke Williamson and her husband Nick Roberts are coming back to Westside L.A. and taking over the slain Minotaure Wine Bar space with another beer-centric project called The Tripel, in reference to the triple threes in its Culver Blvd. address and the Trappist-style ale they plan to obsess over. Slated for early 2011, so far the food sounds less casual than their Redondo Beach-bound Hudson House, although Mrs. Williamson promises, “lighter snacky foods.” They will make their own turkey pastrami for a blue cheese triple-creme melt, serve rotating pates, and an oinker burger with pork, duck confit, truffle cheese, and apricot jam. Williamson made the Beechwood burger famous during her reign there post-Amuse Cafe. Could this so-called “oinker” be another hit between buns from Brooke?
