Chef Kyle Schutte is gearing up to open Vū at Marina Del Rey’s Jamaica Bay Inn on December 1st and sent some R&D; photos of the modern American dishes he plans for the restaurant. You say “Marina del Rey” and “former Best Western” and we picture something much soggier than the breezy and futuristic fare this Richard Blais vet has up his sleeve. The dishes look pretty cool so far, balancing wonder with light ingredients in a strange amalgam of watermelon and tuna crudo, a thin sheet of bison carpaccio, chicken-fried watermelon, and even a presentation that might make us want to eat our peas and carrots.
