What to Eat at Michael Mina 2.0, Opening Tuesday

The new, more casual Michael Mina reopens in the former Aqua space at 252 California next week, and today Grub Street got its hands on the menus, created by Mina in conjunction with his chef de cuisine, Jeremy Ravetz — formerly executive sous chef at Michael Mina at the St. Francis, and a sous chef at Per Se in New York. As you’ll see below, the menu is à la carte-focused but perhaps a bit more refined than we expected given Mina’s earlier talk about downscaling the concept from the St. Francis. Gone are the signature trios, but there is a “duo of Pacific fish,” and there are some surprise ingredients among the other dishes, like a geoduck and pork belly first course with vadouvan curry ($18), and a truffle-stuffed jidori chicken with “cockscomb fricasee and Castelmagno mac & cheese” ($32). Topping off the menu, price-wise, is a salt-baked prime rib for two for $98 ($49 per person).

As discussed earlier, there is a five-course chef’s tasting menu option for $95, with added wine pairings for $45.
