Tonight Chip Roman’s Weekly Tasting Menu Focuses on Lamb

A couple weeks ago, Grub Street mentioned that in spite of repeated James Beard award rejections, Blackfish’s Chip Roman was preparing dinner at the James Beard House. Tonight he’s doing his weekly tasting menu at his Conshohocken restaurant, a four-course meal for $45 per person, and the secret ingredient is lamb. The dinner will feature big eye tuna with heirloom radish, lamb gelee, pumpernickel, lamb shank with chocolate parpadelle, lamb loin and belly with beluga lentils, frisee and mustard jus, and butterscotch beignets and apple cider.
