Jose Garces will open his highly anticipated seventh restaurant, JG Domestic, tomorrow, but Grub Street has the menus today. For his latest effort Garces, an acknowledged master of cuisines of the Spanish speaking world, will focus primarily on the American palate, serving an array of dishes as diverse as the great melting pot that will be composed solely with ingredients sourced in the United States. The menu is broken down in several different sections, including snacks, plates, dinner, drinks and desserts. Some highlights include Keswick Creamery Fondue, grilled baguette, Vidalia onion jam and apple, Duxbury Whitewater Mussels, with Allagash White Ale, garlic sausage and potato, Pig Trotters, Dijon, cranberry compote, orange chicken liver gravy, and Columbia River Wild King Salmon, with poached egg, black olive, brioche, finger lime, and smoked steelhead roe.
