Matthias Merges to Open “Humble” Restaurant After Trotter’s

We’ve been dying to know what Matthias Merges planned to do after leaving Charlie Trotter’s, and it turns out that he has a pretty fully formed answer to that question. In an interview with Eater, Merges claims that he’ll be working with his wife to create a “humble restaurant” which will celebrate “craft in America.” It’ll be less formal than Charlie Trotters, but not too laid back: “We’re not doing white tablecloth and silver, but it’s not going to be as casual of an interpretation of farm-to-table.” His wife happens to be an architect, so the atmosphere will be important. The restaurant will “change the decor every season to reflect the [seasonality of food].” An “early- to mid-summer” opening is predicted, in an “overlooked classic industrial area.” Any guess on where this will be?
