Garces Gets His Ducks in a Row at Chifa

Duck into Chifa next week and you just might go daffy for what Jose Garces is billing as Duck Week. Starting Monday, the Latin-Asian restaurant is rolling out a selection of special dishes and a tasting menu that spotlight one of the key ingredients that helps define the its culinary identity, the almighty duck. Duck Week dishes, which will be available a la carte and as part of a $55 prix fixe tasting menu, are an assortment of some of Chifa’s most popular dishes and some that are entirely new. Chifa’s Duck Week dishes include Duck Buns, Duck Flatbread, Duck Ceviche, duck confit with roasted duck jus, cherry puree, foie gras torchon and brioche croutons, Duck Chaufa, wok fried rice with duck confit and soy-glazed duck breast, Peking Duck, Schezuan pepper crepes and traditional sides, and Foie Gras Ice Cream with pistachio cookie, caramel apple paint, cracklings and pink peppercorns.
