As many of you should know by now, Michael Mina is relocating and reconcepting his eponymous restaurant, reopening in the former Aqua digs on October 19. Mina made his name as executive chef at Aqua in the 90s, and as he discusses in this exclusive video interview, leaving that post was incredibly difficult and emotional, and returning there now as chef-owner is a major triumph. “To have the chance to have that back again is… beyond exciting,” Mina says.
