Earlier this week Grub Street mentioned that Chef Michael Schulson, the chef behind Philly’s Sampan, Atlantic City’s Izakaya and the star of TLC’s Ultimate Cake Off and Pantry Raid, was celebrating his restaurant’s arrival to the Twittersphere. Today he has an even bigger reason to celebrate: Esquire just named him one of its chefs to watch in a piece titled “Four Chefs You Hope Move To Your City One Day.” Nick Balla from San Francisco’s Nombe, Joshua Hopkin from Atlanta’s Abattoir, and Alon Shaya from New Orleans’ Domenica were the other three. Citing Schulson’s oxtail and kimchi dumplings with tomato soy as evidence, the magazine says Sampan’s take on Asian street food has given Philly a “place with snap,” and advises readers to check out the “funky” Graffiti Bar. This all well and good for Schulson, but it begs the question: In 2010 who still uses the word funky? [Esquire]
