Blackbird’s Chef de Cuisine David Posey is the latest area chef to compete in Frank’s ‘n’ Dawgs monthly Iron Dawg Championship. After two months at the top, Todd Stein’s (Cibo Matto) “Frank ‘n’ Stein” lost to Michael Fiorello’s (Mercat a la Planxa) “Pig Latin” in what was apparently the “closest Iron Dawg competition to date!” Posey’s “Ring Around the Posey” is a mustard veal sausage with pickled green tomatoes, shoestring potato cake, house-cured bacon and a tomato aïoli.
