The Dining Room at the Langham Huntington, which closed for renovations last July with the exit of Michael Voltaggio, will soft-open in mid-October with a new chef and a new name. Seeking to shed a musty image that still endured despite its cutting-edge “Piccaso” in the kitchen, the restaurant will now be called “The Royce,” named for Stephen W. Royce, the hotel’s longtime owner and GM. Pretty catchy! Who will be in the kitchen?
David Féau, a French-born veteran of Guy Savoy, New York’s Lutece, our own Cafe Pinot, and Patina’s catering division, will be the new chef de cuisine here, with plans to cook California fare while highlighting local market ingredients and global gourmet product.
The Royce will have two wine rooms, one for red and one for whites, in the corresponding colors, as well as a new glass-enclosed veranda overlooking the hotel’s Horseshoe Garden. Also added to the design by The Johnson Studio is a chefs’ table providing a view into the kitchen where Feau will customize menus for private diners. After Voltaggio shocked and awed this place, few people will feel nostalgic for the Dining Room that idled before him. The reboot already sounds more fun and casual than the Langham past, it’s a shame this refresh approach wasn’t there to buoy Voltaggio’s electricity and energy.
