Levin and Bundy Both Leave Rouge; Modo Mio’s Sauter Is Now Running Philadelphia Bar & Restaurant

Matt Levin, who Grub Street mentioned a while ago was pulling double duty at Rouge while getting his restaurant Adsum ready for its debut, has stepped down from the venerable Rittenhouse haunt, and so has Trevor Budny, the chef de cuisine that he selected to run its kitchen in his absence, the Insider reports. Michael Yeamans will now head the kitchen. Yeamans comes from Center City’s Devil’s Alley and worked at Rouge in the final days of Neil Stein’s reign. Also on the move is Jordan “Red” Sauter, the former chef de cuisine at Modo Mio, who is now running the kitchen at the just opened Old City gastropub, Philadelphia Bar & Restaurant, which Grub Street heard turns out impressive braised veal cheeks and burgers.
