Korean Tacos Coming to Korilla BBQ Truck and Pig Island

Like pork? Then listen up. Jimmy Carbone of Jimmy’s No. 43 just sent over the lineup for Pig Island, the Governors Island pig out we told you about earlier. Next Wednesday, chefs will head to the Greenmarket to pick up pigs from Violet Hill Farm, the Piggery, Autumn Harvest, Flying Pig Farm, and Tamarack Hollow, and then on Saturday, they’ll be serving the dishes you see below — an unprecedented onslaught of swine. You’ll notice Cody Utzman of Papacitos is doing the inevitable Mexican-Korean tacos — you may also want to know that buzz is starting to build around the Korilla BBQ truck (motto: “The Mind-blowing Korean Tacos of NY and NJ”). New York Street Food has some food shots (as does the truck’s Facebook page) and Eater thinks she’s readying for an October rollout.
