Chicago Cut Steakhouse Coming Soon to River North

The city’s latest high-end steak house, Chicago Cut Steakhouse, is planning to open on September 20 in River North. As we found out in March, the restaurant is owned by David Flom and Matt Moore, two longtime former steakhouse managers who have worked with Rosebud Steakhouse, Rosebud Prime, and Smith & Wollensky. As is apt for a high end steakhouse, all the steaks will be USDA-certified prime beef, which they’ll get from New York and dry age on site. They’ve been updating their Facebook page with loads of pictures from the spacious site, which will sit in the newly opened, and utterly stunning, 300 North LaSalle.

Though the menu isn’t finalized yet, we do know that along with all that beef, they’ll have eight fish options, various shellfish, and some pork chops. As is becoming surprisingly common, the wine list will be presented on an iPad, showing “flyover panoramic views of each vineyard and glimpses of each bottle on offer.”
