Chef Chris Cosentino Plays Games With His Customers Via Twitter

Self-confessed ADD sufferer Chris Cosentino, chef at Incanto, has a game he likes to play with diners during his three nights a week on the line in his San Francisco kitchen. As he told a gathering at the Aspen Food & Wine event earlier this year, it’s called Old Man on a Station. “The old man is me,” Cosentino explains. “I’ll work pasta station or sauté, and when I work the station, we get busier.” What he does is announce via Twitter that it’s Old Man on a Station time, and he challenges diners to put him in the weeds by only ordering whatever he’s making, and won’t take help from his crew. Being ADD, he’s checking his Twitter the whole time and getting feedback from customers saying, “I see u,” and “youre not that old yet.”
