Aviary Tackles The Painkiller

The Painkiller is a traditional beach-side cocktail, which ultimately means it is fruity, sweet, and the kind of concoction that is usually served with a big frilly umbrella. We are not judging. But still, it’s kind of odd to watch this cocktail get the royal Aviary treatment. That means that the traditional juices (coconut juice, pineapple juice, orange juice) are mixed with three different kinds of rum (Sailor Jerrry, Matusalem Clasico, Flor de Cana 4 Year) in an ISI canister and then “charged” with liquid nitrogen. The drink is topped with “compressed” pineapple, finger lime cells (WTF?), micro lemon balm, vanilla Maldon salt, and a housemade pineapple soda. “The painkiller I had in St. John didn’t taste like that,” Grant Achatz says after taking a sip, which he then quickly clarifies as being “a good thing.” Check out the video below.
