Lest you think the chef has any real say in how the menu works at Rustic — the restaurant at the newly open Francis Ford Coppola winery in Geyserville — you’d be sorely mistaken. As chef Nick Petrilli tells NBC, “My job here is to convey Francis’s vision, of dishes that he’s eaten throughout his lifetime.” Francis himself chose and vetted every dish, sitting outside the kitchen and approving every plate on opening night. Thus the restaurant’s tagline, “Francis’s Favorites,” and why you’ll hear the name “Francis” a lot as you wander the new tasting facility-slash-museum-slash-restaurant-slash-shrine.
