Much like Hubert Keller, Whist chef Tony Disalvo is taking his inspiration from the deejay. Starting tonight, the toque is transforming The Viceroy’s poolside for sonic suppers that find him cooking dishes based on the changing musical selections of KCRW DJ Garth Trinidad (who’s moniker makes him sound like a country-and-western soca singer). So when Garth plays reggae tonight, DiSalvo will prepare bites of jerk chicken, pork curry, and beef patties. When it’s samba time, expect feijoada, churrasco, and salt cod croquettes from this Jean Georges and Gramercy Tavern alum. Menu highlights: gazpacho, assorted chorizos, Spanish cheeses, olives, marcona almonds, pintxos, paella, tortilla de patatas
Aug 25 : Samba - Brazilian
Menu highlights: salt cod croquettes, feiojada, churrasco of beef, coxinha-chicken and potato croquettes, hearts of palm salad, caruru-shrimp stew with okra, fresh ginger, peanuts and cashews.
