Grilled Cheese To Go, a Connecticut-based “quick-serve franchise concept,” is readying its first flagship in South Station, per a Craigslist hiring post. Grilled Cheese To Go offers several varieties of grilled cheese, none wildly exciting (cheddar with bacon is probably the most out-of-the-box option), as well as tomato soup and chocolate chip cookies.

Between this and the as-yet-unlaunched Roxy’s Grilled Cheese Truck, not to mention the cultishly beloved melted dairy specimens at Coda and Garden at the Cellar, a veritable grilled cheese renaissance is growing in the Hub.
