Mark Mendez isn’t the first Chicago chef to start a blog or even the first to write about what it is like to leave a restaurant (Phillip Foss beat him by a week), but that doesn’t make his latest venture any less interesting. The blog is called the The Cook & The Corkscrew and it features Mark and his wife Liz (who’s also a wine director) writing about the process of starting a new restaurant.
