In news that will shock no one who has been following the story, the Alinea team confirms to Feast that the restaurant’s chef de cuisine Dave Beran will be running the kitchen at upcoming restaurant Next, and chef de tournant Craig Schoettler will be in charge at molecular cocktail lounge Aviary. While the two chefs appear together in videos promoting Aviary’s methods (along with their overlord, Grant Achatz), the two venues won’t have that much overlap: “They’re [structurally] connected, but they’re actually two completely different entities,” Schoettler tells Feast. “They just happen to be next door to each other. So the food at Aviary comes from Aviary, it doesn’t come from Next, and there won’t be cocktails from Aviary at Next.” [Feast]
