Everyone loves an Airstream. And according to SFoodie, Chairman Bao chef Eric Rud left behind an Airstream-trailer-based mobile food operation in Minneapolis called Curbside when he relocated out here, and he’s preparing to roll it out here, after a bit of retrofitting, in five weeks’ time. At tomorrow’s Off the Grid he’ll be testing some stuff out from a tent, like a tuna tataki sliders with wasabi aioli. But look for the shiny silver thing around town (or on Twitter) with a menu something like this, come fall.
